Sausage French Toast Roll-ups

A fun spin to get your kiddos to enjoy eating protein for breakfast

A fun twist on French toast that turns Sanford Family Beef sausage links into an easy breakfast favorite. Serve with warm maple syrup for dipping.

Ingredients

1 package Sanford Family Beef sausage links (1 to 1.5 pound package)

1 loaf of sliced sandwich bread

4 eggs

Splash of milk

1 teaspoon cinnamon

Butter, for skillet cooking

Toothpicks

Maple syrup, for serving

Instructions

  1. Cook the sausage links until fully cooked. We used an air fryer, but you can also cook them in a skillet or in the oven.’

  2. Cut the links in half once cooked.

  3. Prepare the bread. Cut the crusts off each slice of bread. Then using a rolling pin, roll each slice out until it is thin and flat.

  4. Make the French toast mixture. In a wide, shallow dish, whisk together the eggs, a splash of milk and cinnamon.

  5. Roll them up. Place one sausage link half along the edge of a flattened piece of bread. Roll the bread tightly around the sausage.

  6. Dip each roll-up into the egg mixture, turning it so the bread is coated on all sides. Don't let it sit in the mixture too long or the bread can become soggy.

  7. Place a toothpick in the roll up so it doesn’t fall apart when cooking.

  8. Cook one of two ways:
    Air fryer: Place the roll-ups in the air fryer at 400°F for about 3 minutes, until golden and crisp. Skillet: Melt a little butter in a skillet over medium heat. Place the roll-ups seam-side down and cook, turning to cook all 4 sides, until all sides are golden and crisp.

  9. Serve. Carefully remove the toothpicks before serving. Serve warm with maple syrup for dipping.
